Ingredients Serving: 2

  1. ½ cup Arborio rice
  2. 2 cups mango Pulp
  3. ¼ cup sugar
  4. 3 tbsps butter
  5. 1 cup fresh cream

Instructions

  1. Cook ¼ cup sugar with 2 tbsps water in a non-stick pan till it caramelizes.
  2. Heat 2 tbsps butter in another non-stick pan, add Arborio rice and saute for 1 minute. Add 1½ cups mango pulp and cook.
  3. When the juice is almost absorbed, add 1/2 cup water and cook.
  4. When sugar caramelizes, add fresh cream and mix well. Add 1 tbsp butter and mix well.
  5. Add the caramel sauce and mix well and cook for 2-3 minutes more.
  6. Cool slightly and pour into shot glasses.
  7. Serve the sweet mango caramel risotto.
