Ingredients Serving: 6

  1. 1 cup suji/rawa
  2. 1 & 1/2 cup curd
  3. 1 tsp jeera
  4. 2 tsp ginger green chilli paste
  5. 1/2 cup chopped coriander leaves/ cilantro
  6. 1 cup lukewarm water
  7. 1 tsp olive oil
  8. 3-4 packets of plain unflavored fruit salt
  9. Salt to taste
  10. 2 tsp of mulagapudi powder/gun powder
  11. For Basil Shots
  12. 1 cup basil leaves
  13. 1 cup diced coconut
  14. 1/2 cup curry leaves
  15. 3-4 green chillies
  16. 1/2 inch ginger stem
  17. 1 tsp sugar
  18. 2 tbsp lemon juice
  19. Salt to taste

Instructions

  1. For Appam Mix rawa and curd in a bowl and keep aside for 30 mins. Now divide the portion in half and remove half a portion in another bowl and add salt, ginger green chilli paste, coeiander leaves, jeera, salt and mix well.
  2. Now add water to make a flowy batter. Heat the appam stand and grease with little oil. Now add 2 packet of fruit salt to the mixture and wisk it in one direction.
  3. Pour the same in appam stand and let it cook at a slow flame. Cook on both sides. Remove it from the pan and sprinkle some mulagapudi powder on the top. Repeat it with the remainig portion of rawa.
  4. For the basil chutney Grind all the ingredients in a grinder with little water to make a smooth paste. Now in shot glass or any other small glass pour 1 tsp of basil chutney in the glass. Insert toothpick in 2 appams and place on the top of the glass and serve.
