Ingredients to make whole wheat bread

  • for tangzhong-
  • 2 1/2 tbsp wheat flour
  • 1/2 cup water
  • For dough-
  • 2 Cup Whole wheat flour
  • 1 tsp instant yeast
  • 2 tbsp sugar
  • 1 tsp salt
  • 3/4-1 cup warm milk
  • 1 1/2 tbsp curd
  • 1 tbsp oil/butter
  • extra milk and butter for brushing
  • 1/2 tsp sesame seeds

How to make whole wheat bread

  1. for tangzhong-
  2. in a saucepan mix flour and water well without any lumps.
  3. cook over low flame untill thick. keep stirring.
  4. remove from geat and let it cool very well.
  5. for dough-
  6. in a bowl mix flour, salt, sugar, yeast and curd.
  7. add milk and tangzhong and mix to make a dough.
  8. knead this dough for 10-15 minutes.
  9. add oil and knead for another 5 mintes.
  10. apply oil on the dough and transfer it in a bowl.
  11. cover it with a plastic sheet or cling film and keeo it in a warm place. wait for the dough to double in size.
  12. once doubled, knead the dough very gently for 2-3 minutes to knock out air bubbles.
  13. using a rolling pin roll the dough into a rectangle.
  14. roll the dough into a log shape.
  15. place the dough into a loaf tin.
  16. slightly brush with milk and wait for the second rise.
  17. again apply milk and sprinkle sesame seeds.
  18. bake in preheated oven at 190c for 25 minutes.
  19. remove from oven and apply butter. allow it to cool on wire rack for 2-3 hours before slicing.
  20. once cooled serve or use this bread to make sandwich, pakoras, bread rolls etc.
