ABOUT Whole wheat flour Bread (Tangzhong Method) RECIPE

Healthy whole wheat flour Bread is made in Tangzhong method (Japanese). This method yields the softest bread among all other recipes. The softness last for a few more days than other preparation. Basic ingredients are used with a twist of twist of following Tangzhong method.

Ingredients Serving: 4

  1. Fir preparing Tangzhong
  2. Water 1 cup
  3. Whole wheat flour 6 tablespoon
  4. Bread dough ingredients
  5. Lukewarm whole milk 1/2 cup
  6. Salt 3/4 teaspoon
  7. Sugar 41/2 tablespoon
  8. Butter 41/2 tablespoon
  9. Whole wheat flour 3 cups
  10. Yeast 1 tablespoon
  11. Egg wash ingredients
  12. Egg yolk 1
  13. Milk 1 tablespoon

Instructions

  1. To make Tangzhong.
  2. In a small sauce pan, whisk water and whole wheat flour together without any lumps. Heat the mixture over medium heat and stir continuously till translucent. Remove from heat and let it cool
  3. Bloom yeast with lukewarm milk.
  4. Add cooled Tangzhong in a wide bowl with 4tablespoon of sugar, salt, bloomed yest and and 21/2 cup whole wheat flour. Knead for 5minutes (I used electric beater).
  5. Knead well.
  6. The dough should pull off the side of the bowl, if it's sticky, add more flour, a tablespoon at a time. Next, add softened butter, a tablespoon at a time.
  7. Alternatively add flour and butter to the dough till it's shiny and pull off the side of the bowl.Use 3 cup of flour as mentioned.
  8. Knead well for 15 minutes. Take a small piece of dough to test the elasticity by pulling between the fingers. It has to be translucent.
  9. Make a ball out the dough and place it in a greased bowl. Cover the dough with a kitchen towel for the first proofing.
  10. When it's doubled divide the dough into equal parts and roll and place it in a greased bread tin.
  11. Let it sit for second proof for 45 minutes or until doubled in size.
  12. Preheat oven to 180 degree. In a small bowl whisk egg yolk with milk for egg wash.
  13. With a pastry brush apply egg wash on top of the rolled bread dough. This will ensure a golden brown top for your loaf.
  14. Bake for 20 minutes, rotating the baking tray to 180 degree half way through baking for even distribution of heat.
  15. When baking is done cool it on a wire rack.
  16. Un mould when it is cooled. Using serrated knife slice the healthy bread evenly.
  17. Serve healthy bread for breakfast with jam, cheese Nutella or any other toppings of your choice.
