Oats Sorghum Banana Bread: Healthy Treats is a wonderful and healthy treat that you can serve your guests for a lunch or dinner party. A lovely treat that your guests can enjoy without much guilt. You could even serve this as an elegant dessert by serving it with a dollop of Crème fraîche

Ingredients Serving: 4

  1. oat flour, 1/2 cup, refer notes
  2. sorghum/ jowar flour 1/2 cup
  3. whole wheat flour, 1/2 cup , refer notes
  4. Baking soda 1 teaspoon
  5. Refined Oil 1/2 cup, refer notes
  6. powdered white sugar 3/4 cup , refer notes
  7. Vanilla extract 1 teaspoon
  8. eggs 2 numbers
  9. bananas, medium sized and well ripened 4 numbers

Instructions

  1. Preheat the oven at 175 degree Celsius.
  2. Grease and line a loaf tin/ cake tin or muffin tray. Keep aside.
  3. In a large mixing bowl, sift the flours along with baking soda. Keep aside.
  4. In another large bowl, whisk together oil, vanilla, sugar and eggs until well combined.
  5. Peel and mash bananas with a fork until you get a coarse puree. Mix the banana puree into the egg mixture.
  6. Add the dry ingredients into the wet ingredients. Stir gently until there are no dry clumps of flour. Make sure not to overmix.
  7. Pour this mixture into the prepared loaf tin/ cake tin or muffin tray.
  8. Bake at 175 degree Celsius for 40 to 50 minutes, checking with a tester or dry spaghetti. [oven times may vary depending on the oven] If the tester comes out dry, then the loaf is baked and ready.
  9. Allow it to cool in the pan for 10 minutes, The carefully turn it out onto a cooling rack.
  10. Allow the banana bread to cool completely before slicing it up. This loaf yields about 10 thick slices of banana bread.
  11. Serve as a dessert for guests with a dollop of Crème fraîche or just as it is.
