ABOUT Vegetable Udon Noodles RECIPE

Ingredients Serving: 2

  1. 1 tsp vegetble oil
  2. 1/2 onion sliced
  3. 2 carrots slice thin like matchsticks
  4. 1 cup green onion cut diagonally
  5. 1/2 cup asparagus tips cut off
  6. 2 cups spinach leaves
  7. 200 gms udon noodles
  8. For the sauce:
  9. 1/2 tsp grated garlic
  10. 2 tsp store bought sambal olek
  11. 1 tsp light soya sauce
  12. 2 tsp rice wine vinegar
  13. 1/2 tsp sugar
  14. 1/2 tsp sesame oil
  15. To garnish:
  16. 1 tsp sesame seeds
  17. handful for green onions

Instructions

  1. Boil the noodles according to the instructions on the package. Drain. Set aside.
  2. In a wok heat oil and and saute the onions until translucent. Add the carrots, asparagus and spinach and saute on high for an additional 3 minutes.
  3. Add green onions and tip in all the ingredients for the sauce other than the sesame oil. Stir fry on high for 2 minutes.
  4. Add the udon noodles to this and stir fry for 3 minutes or until the noodles are coated with the sauce. Turn off heat
  5. Add the sesame oil and sesame seeds and toss well. Remove into a serving bowl. Garnish with additional green onions.
