A super simple to make, moist, melt in your mouth delicious Honey Banana Walnut Cake

Ingredients Serving: 4

  1. Banana 2 large
  2. self-raising flour 100g
  3. sugar 60 g
  4. Egg 2 medium
  5. Milk 2 tbsp
  6. oil (i used olive oil) 4 tbsp
  7. Lemon juice as desired
  8. Honey as desired
  9. Walnut as desired
  10. Icing sugar for dusting

Instructions

  1. slice half a banana and set aside for topping later
  2. mash the rest of banana in a bowl together with some honey & lemon juice
  3. add the eggs & sugar in a mixing bowl and mix lightly (i used an electric mixer on low)
  4. add in milk & oil & continue mixing
  5. add in mashed banana & a handful of chopped walnuts & continue mixing
  6. sieve flour in a big mixing bowl
  7. add in mixture to flour & fold in using a spatula, do not overmix
  8. line a loaf tin with some butter & pour mixture in, drop it a few times to release air bubbles & smooth out the surface
  9. add the banana sliced earlier & some unchopped walnuts on top
  10. bake in oven at 180 degrees for 35-40 minutes, check periodically for any signs of burning (walnuts) & lower heat if necessary
  11. once done, remove cake onto chopping board/plate, dust with icing sugar & it's ready to serve!
