ABOUT Baingan Masala Recipe RECIPE

Baingan masala recipe or Indian baingan masala is simple to cook and delicious to eat. These are spicy, crispy and taste so delicious, that it can be eaten as is. Otherwise Masala Brinjal can be served with roti, parantha or even butter naan. It can also be eaten as a snack.

Ingredients Serving: 4

  1. Long baingan (Brinjals) - 1/2 kgs
  2. Gram flour (besan) - 1 cup
  3. Mustard seeds (Rai) - 1 tsp
  4. Urad dal - 1 tbsp
  5. Salt, Red chili powder, turmeric powder - As per taste
  6. cumin seeds -1 tsp
  7. coriander Powder - 1 tsp
  8. Dry mango powder - 1 tsp


  1. Wash and cut the brinjals into circles.
  2. Mix all the masala together in a bowl and coat this masala with baingan.
  3. Heat 2 tbsp mustard oil in a non-stick pan with. Splutter mustard seeds and cumin seeds. Add masala coated baingan in to the pan and cook on medium flame till it becomes crisp. Stir occasionally in between.
  4. Once brinjal slices becomes crisp, switch off the flame and serve hot with roti or bread.
