Ingredients Serving: 2

  1. 5 Bread slices
  2. 4 Eggs
  3. salt as per taste
  4. 2 teaspoon pepper powder
  5. Few mint leaves chopped
  6. 1 Onion
  7. Ghee for bread toast
  8. Oil for making omelette

  1. In a bowl add finely chopped onions, salt, pepper and finely chopped mint leaves.
  2. Add in eggs. Mix well.
  3. Heat a tawa on a medium flame. Take a bread slice, apply generous amount of ghee and toast it. Make sure you toast one side of the bread to a crisp texture and the other side toast it to a little less crisp texture.
  4. In a tawa, heat a teaspoon of oil on a medium flame.
  5. Add in a ladle of egg mixture.
  6. Once the edges start to cook and the centre is still gooey, place a toasted bread on it. Make sure you place the bread in such a way that the crisp texture of the bread touches the omelette and little crisp texture is upside. Cook for 30 seconds.
  7. Now flip the bread omelette slowly and lower the flame. Cook it until the little crisp side turns crispy enough (as per your choice the crispiness differ).
  8. Note: when you keep the bread toast on the gooey egg, the holes in the bread absorbs the egg inside and the centre of the bread will be soft. So when you flip it to the other side, lower the flame and cook fully. If you like half boiled eggs, then you need not flip the bread toast. Enjoy it right away.
  9. Prepare the remaining bread the same way and serve it with tomato sauce.
