Vegetable oats upma is a fiber rich breakfast recipe which can be prepared in minutes and is damn healthy. Vegetable oats upma is quite filling as it keeps you satiated for a long time.

Ingredients Serving: 2

  1. Oats – 1.5 cup/ 250 gms
  2. Chopped vegetables (Beans carrots Beet root Onion) – 1 cup
  3. Chopped tomatoes – 2 medium size
  4. Curry leaves – a few
  5. Mustard seeds – ½ tsp
  6. cumin seeds – 1 tsp
  7. salt – 1 tsp
  8. lemon juice – 1 tsp

Instructions

  1. Heat 1 tsp oil in a kadai, splutter cumin seeds, curry leaves. Sauté vegetables and tomatoes.
  2. Add oats and mix well. Add 3 cups or double the quantity of water. Cook for 10 minutes till the water evaporates.
  3. Once ready, add lemon juice and serve hot for breakfast.
