ABOUT One pot pumpkin penne pasta RECIPE

Have you ever tried pumpkin puree in pasta? If not then please do try as this tastes very delicious! Here have tried with homemade pumpkin puree which you could store in refrigerator for 10 days or you could even try with ready made pumpkin puree too. Also this is my first try in pasta to work on only one pot, so you don't need to first boil pasta separately, here everything I've done in one pot only, no mess at all!

Ingredients Serving: 2

  1. 1 tbsp olive oil
  2. 1/2 cup green bell peppers, diced
  3. 1/2 cup yellow bell peppers, diced
  4. 1/2 cup red bell peppers, diced
  5. 1/2 cup sweet corn kennels
  6. 1/2 cup cheery tomatoes, chopped
  7. 250 gm penne pasta
  8. 2 1/2 glass of water
  9. Salt to taste
  10. 1/2 tsp black pepper powder
  11. 1 tsp Oregano
  12. 1/2 tsp chilli flakes
  13. 1 cup pasta sauce
  14. 1 cup pumpkin puree
  15. 1 tbsp tomato ketchup
  16. 1/4 cup black olives
  17. 1/4 cup jalapeños
  18. For homemade pumpkin puree:
  19. 1/4th halved pumpkin
  20. Water for steamer

Instructions

  1. First in medium sized kadai, put oil and add all the peppers one by one by following them to sautè one by one.
  2. Add sweet corn kennels, pasta and cherry tomatoes.
  3. Add water, salt, pepper, chilli flakes and oregano.
  4. Mix it well and place the lid on top and allow it to cook for 12-15 mins or until pasta gets cooked properly.
  5. Now add pasta sauce, pumpkin puree and mix it well.
  6. Add tomato ketchup, olives and jalapenos and mix again.
  7. Serve hot with any bread toasts of your choice. (Here have serve with corn cheese chilli toasts).
  8. Enjoy this super easy One Pot Pumpkin Penne Pasta which is super delicious! (It you want to make pumpkin puree at home then first remove the seeds from pumpkin and then steam it for 10 mins, remove the skin and blend it, that's it! Your pumpkin puree is ready)
