ABOUT Aloo Gobhi Palda RECIPE

A himachali recipe, aloo gobhi palada cooked with some whole spices, curd and soaked rice paste.

Ingredients Serving: 4

  1. Gobhi 1 large
  2. Aloo 2 no.
  3. salt as per taste
  4. Red chili powder 2 tsp
  5. Turmeric powder 1 tbsp
  6. coriander powder 1 tbsp
  7. Cumin seeds 1 tsp
  8. Green cardamom 2no
  9. Black cardamom 1no
  10. Cinnamon 1 small stick
  11. Clove 4 no.
  12. Bay leaf 1
  13. 1 large sliced onion
  14. Curd 2 tbsp
  15. soaked rice 1/2 cup
  16. Ghee 2 Tbsp
  17. Coriander for garnishing

Instructions

  1. Wash and Cut the gobhi into the medium size floreset. Peel wash and cut into medium size cubes.
  2. Heat ghee in a pan add cumin, clove, cinnamon, bay leaf, black cardamom as they pop add sliced onions fry until golden.
  3. Add turmeric, coriander powder, red chili powder and 2 tbsp water. Cook the spices for 2-3 minutes.
  4. Add aloo and gobhi stir and mix well with spices. Add 1/2 cup water cover and cook for 10 minutes on medium hot heat.
  5. Meanwhile make a fine paste with green cardamom and soaked rice.
  6. Open the lid add whipped curd, salt and rice paste mix well.
  7. Simmer the heat Cook for 5 minutes. Switch off the gas. Garnish with coriander serve hot with chapati or paratha.
