ABOUT Pahari Aloo Palda RECIPE

This recipe is very simple and quick to prepare.Pahari aloo palda is slightly sweet with a bit of sourness in it.It can be made with potatoes or with mix vegetables.I mostly used my leftover aloo gobi to prepare the palda.Currently I am living in Vietnam-Hanoi.

Ingredients Serving: 4

  1. Potatoes cut into wedges. 3 Big size.
  2. Onion thinly sliced 1 Big.size
  3. Yogurt 3 Cup
  4. Water 1 cup
  5. Oil 2Tbsp
  6. Cumin seeds/Jeera 1Tsp
  7. Cinnamon stick/Dalchini 1"piece
  8. Cloves/Laung 4No
  9. Green cardamom/choti elaich 3No.
  10. Hing 1/4Tsp
  11. Raw rice 2Tbsp
  12. Red chili powder/Lal Mirch 1Tsp
  13. Turmeric powder/Haldi. 1Tsp
  14. Coriander powder/Dhania 1Tsp
  15. Garam Masala 1Tsp
  16. Salt to taste

Instructions

  1. Soak rice in 4Tbsp of water for 10 minutes.
  2. After 10 minutes grind rice along with cardamom into smooth paste.
  3. Mix rice paste to the curd and mix well.
  4. Now add 1 cup.of water to curd whisk well and keep aside.
  5. Heat a pan with oil on medium heat.
  6. Add cumin seeds, cinnamon, cloves and hing.
  7. Fry for a minutes or until they turn aromatic.
  8. Now add sliced onions and cook until it turns translucent in color.
  9. Add the chopped potatoes along with turmeric powder, coriander powder,red chili powder,garam masala and salt.Mix everything well.
  10. Cover pan with lid and cook potatoes on.medium heat until they are soft.
  11. Add little water (1/4 cup ) if needed to cook potatoes.
  12. Once the potatoes are cooked lower the flame.
  13. Add whisked rice -yogurt mixture to cooked potaotes.
  14. Keep stiring and bring the mixture to boil on low flame.
  15. Do not increase the flame otherwise yogurt might crudle.
  16. Once the mixture comes to light boil immediately turn off the flame.
  17. Garnished with fresh coriander leaves.
  18. Serve with rice or chapati.
