ABOUT Chenna poda / Baked cheese cake RECIPE

Chenna poda / Chhena poda is the quintessential cheese dessert from the state of Orissa in eastern India. Chhena poda literally means burnt cheese in Oriya. It is made of well-kneaded homemade cottage cheese or chhena, sugar, cashew nuts and raisins, and is baked for several hours until it browns.

Ingredients Serving: 4

  1. 1.5 cup - fresh Paneer ( made from 2 kg Milk )
  2. 1/2 cup - Sugar
  3. 2 tbsp - semolina
  4. A pinch of Cardamom
  5. 1 tbsp - Ghee
  6. Handful of Raisins and cashews

Instructions

  1. Make fresh paneer and keep it aside for 10-15 minutes.
  2. Do not squeeze it very hard, a spongy texture with a little moisture is good enough.
  3. Heat little ghee in a pan, roast cashews and keep it aside.
  4. Now, take paneer in a bowl and mix it with semolina and cardamom.
  5. Start kneading it till you get a very mashed quality, this will take 3-4 minutes.
  6. Add sugar and nuts and again mix it with paneer thoroughly to get a crumbly mixture finally.
  7. Now, in the ramekins, spread a little ghee and keep them on low flame to melt it properly.
  8. Add sugar to it and let it caramelise for a minute.
  9. Pour in the paneer mix over the caramelised sugar.
  10. Press it with fingers to form an even surface.
  11. Bake the ramekins for 25-30 minutes. Insert a toothpick to check if it is cooked.
  12. Cool it for a while, and take it out from the ramekin. Serve it warm.
