Ingredients Serving: 6

  1. Karela 1/2 kg
  2. Oil to saute 1/2 cup
  3. Paanch phoron - 1 tsp
  4. Hing 1/4 tsp
  5. Dhaniya [coriander powder] 4 tsp
  6. Haldi [turmeric powder ] 1/2 tsp
  7. Lal mirch powder [red chilly powder] 1 tsp
  8. Garam masala 1/2 tsp
  9. Amchur powder [dry mango powder] 1/2 tsp
  10. Imli pulp [tamarind pulp] 2-3 tbsp
  11. Salt to taste

Instructions

  1. Cut the karela into slices and keep aside.
  2. In a pan heat the oil. Add paanch phoron let them crackle. Add hing and then sliced karela. Add salt and haldi and cover the pan on High flame for 2-3 mins.
  3. Uncovered the pan saute once and add all the ingredients expect imli pulp. Mix and cover for a while. Saute the karela till all the water from the karela.
  4. Add the imli pulp and mix for a while and remove it from the flame. Serve hot with hot rotis.
