Mini baigan [brinjal] stuffed with green masala. A perfect side dish for all occasions.

Ingredients Serving: 2

  1. Mini baigan 6 pcs
  2. Mini potatoes 3 pcs
  3. Boiled green peas crushed 1/2 cup
  4. Fresh grated coconut 1 /2 cup
  5. Roasted penuts 2 to 3 table spoons
  6. Roasted white til 1 table spoon
  7. White kurmura powder 3 to 4 table spoons
  8. Green chilly pst 1 tea spoon
  9. Ginger garlic paste 1 tea spoon
  10. Fresh coriander chopped 1 cup and garnish
  11. Haldi powder pinch
  12. Garam masala 1 tea spoon
  13. Sugar optional
  14. Lemon juice 1 to 2 tea spoon
  15. Coriander powder 1 tea spoon
  16. salt as per taste
  17. Rai 1 tea spoon
  18. Jeera 1 tea spoon
  19. Oil 3 to 4 spoons

Instructions

  1. Take baigan and poatoes n slit them n keep aside.
  2. Now tak mixi jar add in mashed boiled green peas,coconut, coriander, ginger garlic paste,chilly paste,penuts powder, til, salt, haldi, lemon juice, sugar , garam masala,coriander powder, kurmura powder and make fine paste. Add water if required.
  3. Now stuff these paste into the baigans and potatoes.
  4. Take 4 table spoons of oil and add in rai, jeera and potaoes and cover till they are half done.
  5. Now add in stuffed baigan to it and add in left over paste and cook it by keeping water on top plate.
  6. You can adjust the salt as per your taste at this stage.
  7. Once done garnish with coriander and fresh grated coconut and serve with roti or rice.
