ABOUT Gobi ki Kheer RECIPE

A yummy fat-free and sugar free cauliflower pudding that is a great dish to prepare during festivities. It is creamy yet light, sweet yet healthy and is very easy to make.

Ingredients Serving: 6

  1. 2 liter low fat milk
  2. 1 tin lite condensed milk
  3. 1 medium cauliflower
  4. 1/4 cup Sugar free Natural
  5. 1 tsp cardamom powder
  6. 2 tablespoon foxnuts (phool makhana or lotus seeds)
  7. 2 tablespoon chopped almonds
  8. 2 tablespoon chopped cashews
  9. 2 tablespoon grated coconut
  10. 2 tablespoon ghee
  11. Rose petals and shaved coconut for garnishing

Instructions

  1. Boil milk in a heavy bottom based saucepan on a low flame. Let it simmer until the milk is half of its quantity.
  2. Meanwhile finely grate the cauliflower.
  3. Heat 1 tsp of clairified butter or ghee and roast the almonds, cashews & fox nuts. Keep these aside.
  4. Now take a heavy bottom based wok and heat rest of the ghee. Add cauliflower and cardamom powder.
  5. Roast the cauliflower for 3-4 minutes until it is golden in colour and the raw smell fades away.
  6. Now add in the reduced milk and condensed milk. Add sugar and stir on a low flame for 2-3 minutes. Turn off the heat and add the nuts and grated coconut.
  7. Garnish with rose petals and shaved coconut. Serve hot.
