Masala bharwan karela is a north indian delicacy. it is stuffed with mouth watering masala which has tanginess of tamarind and a zing of onion.

Ingredients Serving: 3

  1. Karela (bitter gourd) 250 gms
  2. Oil to deep fry
  3. Mustard seeds 1/4 tsp
  4. Methi seeds 1/4 tsp
  5. Fennel seeds 1/8 tsp
  6. Onion 3 crushed or finely chopped
  7. Salt to taste
  8. Turmeric powder 1/2 tsp
  9. Red chilli powder 2 tsp
  10. Coriander powder 2 tsp
  11. Garam masala 1 tsp
  12. Tamarind pulp 1/4 cup
  13. Panch phorni masala 2 tsp
  14. Dry roast mustard seeds, fennel seeds, methi seeds, onion seeds, cumin seeds and grind it coarsely. (don't make fine powder)

Instructions

  1. Wash and peel the karelas and cut both the ends. Then slit lengthwise and carefully scoop out the seeds and make it hollow inside. It should remain whole so be careful and again wash it once and keep it in a strainer and pat dry.
  2. Deep fry the karelas till its cooked and it should be light brown colour, strain it on a paper napkin and let them cool for some time.
  3. In the same kadhai heat required oil only to fry the masala for stuffing. Add mustard seeds, methi seeds, fennel seeds and let it splutter.
  4. Add the onions to oil and fry them until its brown, then add salt and all the dry masalas except panch phoran masala and mix.
  5. Quickly add the tamarind pulp and cook it on low flame for 4-5 minutes and lastly add the panch phoran masala and close the lid. After 1 minute turn off the flame.
  6. Now, stuff the prepared fried masala in the fried karelas, it should not break.
  7. Again heat the pan and add 1tsp oil and fry the stuffed karelas for 10 minutes on a low flame. You can fry them as much brown you want and add the remaining fried masala as well.
  8. Fry and garnish with coriander leaves and sprinkle some panch phoran masala.
  9. Serve with roti and dal rice for a complete meal
