ABOUT Herby Italian spiced Karela RECIPE

This is a fusion of flavours, italian herbs with Indian karela or bitter gourd.

Ingredients Serving: 2

  1. 100 gm finely sliced karela [bitter gourds]
  2. Onion slices half cup
  3. Capsicum half cup
  4. Italian herbs 1tsp
  5. Spring onions or scallions half cup
  6. Garlic 1 tsp
  7. Oregano 1/ 2 tsp
  8. Tomatoes half cup
  9. Balsmic vinegar 1/2 tsp
  10. Tomato ketchup 1 tsp
  11. olives for garnish
  12. Oil 1tsp
  13. Salt

Instructions

  1. First wash the karela and keep aside. Heat oil in a pan and shallow fry with salt and pepper.
  2. Once the karela turns brown and is half cooked ,add the onions, scallions , capsicum and tomatoes. [Cherry tomatoes really go well].
  3. Now add the italian spices and keep frying on a low flame. Keep adding oregano and pepper as required.
  4. Lastly when cooked add little ketchup and serve hot with roti or rice. Garnish with olives and drizzle some balsmic vinegar, on top.
