Ingredients Serving: 2

  3. Milk 3tsp
  4. Salt
  5. Cheese slices - 2
  6. Paprika - 1 tsp
  7. Harissa cream - 4 tbsp
  8. Italian herb mix - 2 tsp
  9. oregano - 1 tsp
  10. Pepper - 1/2 tsp


  1. Wash a fresh egg plant into 4 slits Pierce eggplants with the tip of a knife or fork then arrange on a foil-lined baking sheet.Roast eggplants three ways: over hot charcoals, on top of the stove burner, or in microwave.
  2. To roast eggplants in the gas stove set gas on low flame with silver foil roast eggplants uncovered for 15-20 minutes until skin has wrinkled and darkened.
  3. Remove from gas and set aside to cool.Once eggplants are cool to touch, carefully peel them, removing most of the skin. If you are unable to remove all of it, don’t worry, it is perfectly okay

Leave the stems intact.In a bowl or plate, season eggs with salt and pepper milk oregano , Italian spices, paprika and lightly beat.Flatten eggplants with a fork and submerge into the beaçten eggs mixture and cheese slices. Coat all sides.Heat oil in skillet and fry eggplants about 2 minutes per side until golden brown.
