Ingredients to make Shahi Cauliflower Kofta

  • for kofta
  • thinly grated cauliflower-1cup
  • cornflour-2tablespoon
  • dry milk-2 tablespoon
  • raisins-5-6
  • green coriander leaves
  • green chilli-1
  • corriander powder-1/2tsp
  • Garam masala-1/8tsp
  • malai-1tablespoon
  • salt to taste
  • oil for fry
  • for graveyard
  • onion-2
  • ginger garlic paste-1ts
  • tomato-2pureed
  • coriander powder-1tsp
  • red chilli powder-1/2tsp
  • haldi-1/2tsp
  • Garam masala-1/8tsp
  • salt to taste
  • Khoya--1tbls
  • watermelon seeds-2tsp
  • coriander leaves
  • kasoori methi-1rsp

How to make Shahi Cauliflower Kofta

  1. wash gobhi grate thinly. microwave for 1 minute.
  2. Add rasinis in malai.
  3. Add all other ingredients in gobhi and mix well.
  4. make small balls and flatten on palm fill with raisins Malian mixture .
  5. close it and make balls in any shape u like.
  6. Heat oil in a pan and fry on medium fire to golden brown.
  7. grind onion.
  8. soak watermelon seeds in water for 1/2an hour. grind to smooth paste.
  9. heat oil in a pan add hing after add onion. fry it for 2-3minutes then add ginger garlic paste.
  10. When onion fruits add all the dry masalas except Garam masala.
  11. Add tomato purée fry till oil leaves sides.
  12. add khoya and paste of watermelon seeds fry for minute.
  13. Add 2cups water and cover it .
  14. After 5-7minutes when curry is thick add kasoori methi and Garam masala.
  15. boil for another minute.
  16. put Kofta in serving dish pour curry on it before 15minutes to serve
  17. garnish with coriander leaves.
