  • tomatoes 4
  • rice 1/2 cup
  • ghee 1 tablespoon
  • garlic cloves 5,6 crushed
  • onion 1 chopped
  • Pitted olives 2 tablespoon
  • Boiled corn 2 tablespoon
  • Chopped parsley 2 tablespoon
  • Cheese cubes 4
  • Shredded cheese 1/4 cup
  • salt to taste
  • Black pepper 1/2 teaspoon
  • Italian seasoning 1 tablespoon

How to make Baked Stuffed Tomatoes

  1. COOK 1/2 CUP RICE TILL IT'S 70 % DONE
  2. CUT OFF THE TOPS OF 4 TOMATOES, SCOOP OUT THE PULP
  3. SPRINKLE SOME SALT, KEEP THEM UP SIDE DOWN ON A WIRE RACK
  4. FRY 1 TBSP CASHEWS IN 1 TBSP GHEE & KEEP ASIDE
  5. ADD 5 GARLIC CLOVES, 1 ONION & A LITTLE SALT , FRY TILL TRANSLUCENT
  6. ADD TOMATO PUREE ( MADE FROM SCOOPED OUT PULP )
  7. ADD 1/2 TSP BLACK PEPPER & 1 TBSP ITALIAN SEASONING
  8. MIX IN THE BOILED RICE, TAKE OFF HEAT
  9. ADD THE FRIED CASHEWS, 2 TBSP EACH OF OLIVES, STEAMED CORN & CORIANDER
  10. ADD 1/4 CUP GRATED CHEESE
  11. FILL THE SCOOPED TOMATOES WITH THE RICE & 1 CHEESE CUBE IN THE CENTRE
  12. TOP WITH SOME GRATED CHEESE
  13. ARRANGE THE STUFFED TOMATOES IN A BAKING PAN, DRIZZLE SOME GHEE ON TOP. BAKE AT 200 DEGREES FOR 20 MINS
  14. SERVE HOT
