ABOUT Idli RECIPE

The staple food of south India . These soft and fluffy beauties can be had anytime as they are absolutely light on stomach .

Ingredients Serving: 10

  1. 1 and 1/4th cup - Urad dal ( Without skin)
  2. 3 cups - rice ( you can use any rice , preferably the broken ones , not the whole grain like basmati)
  3. 2 tsp- salt
  4. water for grinding as required

Instructions

  1. Wash and soak rice and the dal separately .
  2. Soak for 8-9 hours or over night.
  3. Now grind the dal and the rice separately into a smooth paste.
  4. Now mix them both and add salt to it .
  5. Keep it aside for fermentation for atleast 6 to 7 hours .
  6. Heat around 1 glass of water in a pressure cooker .
  7. Grease the idli stand and pour a ladle full of batter in each cavity .
  8. Place the stand in the pressure cooker .
  9. Cover the pressure cooker with its lid but without the whistle .
  10. Cook on high flame for 10- 12 minutes and the put the gas off .
  11. Let it remain aside for 5 minutes and the remove the stand from the cooker .
  12. Again wait for 5 minutes and then de mould the idlis with a spoon .
  13. Serve with coconut chutney or piping hot sambar .
