Ingredients Serving: 4

  1. Besan or chickpea flour 1 cup
  2. Sour curd 2 tablespoon
  3. Salt as per taste
  4. Green chilli paste 1/2 teaspoon
  5. Ginger paste 1/4 teaspoon
  6. Water
  7. Oil 2-3 tablespoon
  8. Turmeric powder 1/4 teaspoon
  9. Asafoetida 1/4 teaspoon
  10. Rye or mustard seeds 1/2 teaspoon
  11. Slit green chillies 2
  12. Coriander leaves finely chopped 1 tablespoon
  13. Eno or fruit salt 1 pouch
  14. Vinegar 1 tablespoon
  15. Sugar 1 teaspoon


  1. Take a mixing bowl and add besan.
  2. Add salt. Mix.
  3. Add curd 1 tablespoon of oil green chilli paste ginger paste and mix well. Add some water so that the batter is semi solid neither too runny nor too solid.
  4. Add eno and mix lightly so that it is incorporated evenly within the besan mix
  5. Transfer to a greased tray and pat on the tabletop to remove any air bubbles.
  6. Steam in a microwave for 3 to 4 mins . Check with a toothpick if it comes out clean it's done else cook for another couple of minutes. Keep aside.
  7. In another pan heat a tablespoon of oil . Add hing and rye . When Rye crackles add green chillies .
  8. When green chillies are done add vinegar and about 3- 4 tablespoon of water add sugar. Bring to a boil.
  9. Pour the prepared tempering all over the dhokla and keep for 5 minutes until the liquid is absorbed well by the dhokla. Garnish with coriander leaves.
  10. Cut in desired shapes and serve
