ABOUT Pakoda basket! RECIPE

With Diwali round the corner, these easy & tasty pakodas/murukkus are are perfect treat for all. They can be made healthy too by addition of greens.

Ingredients Serving: 4

  1. 2 cups of finely seived rice flour
  2. 1 cup of chickpeas flour/besan finely seived
  3. Water as needed for the dough
  4. Salt to taste
  5. Oil for deep frying.
  6. A pinch of asfoteida
  7. 1 tbspn of cumin seeds/jeera
  8. 1 tspn dry spices likes turmeric and red chilly(you may take more red chilly powder incase if you prefer spicy pakodas)
  9. For spinach fritters:
  10. A handful of fresh cleaned spinach leaves
  11. (you need a pakoda press with various moulds to help you in the process)

Instructions

  1. Add all the dry ingredients in a large mixing bowl including the flours, spices, salt & asfoteida. Mix well.
  2. Add a tbspn of oil. Add water bit by bit to knead a soft dough(almost like one we make for puris). Meanwhile keep a non stick kadai ready with enough oil for deep frying on medium heat.
  3. Once your dough is ready, grease the pakoda press with oil.
  4. Take a handful of the dough and stuff into the pakoda press after you choose the shape of the mould you prefer. The oil for frying should be ready by now.
  5. Slowly press the dough through the pakoda press in the hot oil and deep fry both sides till golden brown or ready. You may need to fry in batches.
  6. Stain excess oil first by placing them on a kitchen tissue paper and store them in airtight containers once they have reached room temperature.
  7. For palak fritters/murukku:
  8. Take the spinach in a blender and add enough water to make a liquidy paste(not very thick)
  9. Follow the above steps for making the fritters; but replace water by the spinach paste you made to knead the dough.
  10. Enjoy the pakodas during festivals or just on regular basis with tea.
