Batata vadas are my all time favorite so thought of making falahari Batata vadas. These batata vadas are made with potatoes and spices and coated with batter made from flours which we use during fasting, and then deep fried.  I have served them hot and crisp with my innovative orange - mint- coriander chutney.

Ingredients Serving: 4

  1. For the vadas
  2. Half cup homemade paneer/cottage cheese
  3. Boiled potatoes  -2 big
  4. Lemon juice - 1 teaspoon
  5. Peanut powder - 1/4th cup
  6. Green chillies - 1 chopped
  7. Coriander leaves chopped - 2 teaspoon
  8. Roasted jeera/cumin powder - 1/2 tsp
  9. Black pepper powder 1/2 tsp
  10. Rock salt as per the taste
  11. For the batter
  12. One cup Shingara aata/water chestnut flour and rajgira/amaranth flour mix.
  13. Ghee for frying
  14. Rock salt 1/2 tsp
  15. Falahaari orange Coriander mint chutney Ingredients
  16. 100gms dhaniya/coriander leaves
  17. 8-10 leaves pudina/mint leaves
  18. 3 -4 green chillies, all washed and chopped,
  19. 1/2 tsp rock/sendha salt.
  20. 1/2 orange peeled and deseeded
  21. 1/2 teaspoon lime juice

Instructions

  1. Peel and Mash the potatoes, add paneer, peanut powder, salt , chilli, lemonjuice, coriander, jeera powder to potatoes & mix well.
  2. Now make small  flat vadas from the above dough.
  3. For the batter take the flour mixture in a mixing bowl. 
  4. Add 1/2 tsp salt and water and mix well to prepare a batter of medium consistency (neither too thick or runny)
  5. Dip the vadas in batter and coat them from all sides
  6. Now deep fry in hot ghee or peanut oil on a medium flame until golden brown in colour.
  7. Take them out on an absorbent paper.
  8. Serve hot and crisp falahari Batata vadas with  falahari orange mint coriander chutney .
  9. Method for the orange mint coriander chutney
  10. Grind all ingredients to a fine paste.
  11. Finally add lime juice, and enjoy endlessly
