ABOUT Pan toasted cookies RECIPE

Simple to make, crunchy and ready within minutes...pan toasted cookies are something I learned from my brief stay in Goa from my neighbour..a wonderful cook and baker, Mrs Theresa.

Ingredients Serving: 4

  1. All purpose Flour 150 grams
  2. Brown and white sugar 50 grams of each
  3. Egg(optional)1
  4. Unsalted butter 100 grams
  5. Salt 1 teaspoon
  6. Baking soda 1 teaspoon
  7. Vanilla extract (optional)1 teaspoon
  8. A handful of Choco chips

Instructions

  1. Combine together the dry ingredients(except the choco chips) first and mix well with hand. Meanwhile melt the butter over low heat
  2. Whisk the egg and fold in well in the mix . Add vanilla extract
  3. Now add the melted butter to the mix and fold in well
  4. Throw in some Choco chips and make a soft but firm dough. You need not knead it like regular dough used for baking
  5. Grease a non stick pan with 1 tspn butter and set on Low heat
  6. Make small balls of the mix prepared and gently flatten then using your fingers. you may choose to make a press design using a fork on one side
  7. Now lay them one by one on the greased pan and toast them on Low heat covered for upto 10minutes or till the side turns slightly brown
  8. Take off the lid and check if done. Then flip them gently and toast the other side for same duration. You will get the same aroma that you get while baking in oven. At this stage the cookies may appear a bit soft.
  9. Once done lay them off to cool. They will now have the same texture and crunch as any oven baked cookies
  10. Store in air tight box
