Methi And Coriander Khichi/Khichu

ABOUT Methi And Coriander Khichi/Khichu RECIPE

Khichu or Khichi is Traditional Gujarati Snack made with rice flour. Mostly all Gujaratis love to have it with pickle sambhar or red chilli powder or garlic chutney.

Ingredients Serving: 6

  1. Rice flour 1 cup
  2. Chopped fresh methi leaves 1/2 cup
  3. Chopped coriander leaves 1/2 cup
  4. Roasted and roughly crushed cumin seeds 1 teaspoon
  5. Roasted sesame seeds 2 tablespoon
  6. Garlic cloves 3
  7. Green chillies 3
  8. Small piece of ginger
  9. Baking soda or papad kharo 1/4 teaspoon
  10. Salt to taste
  11. Water 2 1/2 cups

Instructions

  1. Peel garlic and ginger and wash them
  2. Remove stem of chillies and wash them.
  3. Wash Methi and coriander leaves. Add them to the jar of blender.
  4. Add ginger, garlic and chillies to methi leaves and coriander leaves to jar of blender and blend them to smooth paste
  5. Roast cumin seeds in microwave for 30 seconds and crush them with hands and keep aside
  6. Add 2 and 1/2 cups of water into a deep pan and bring it to boil
  7. Add paste of Methi coriander leaves, salt, cumin seeds and sesame seeds to water and boil it
  8. Add baking soda to water and mix
  9. Once water starts boiling, remove it from heat. Slowly add rice flour, 1 teaspoon at a time. Stir constantly to avoid lumps of dry flour.
  10. Take the mixture out in a broad plate and knead it to smooth with the back of a teaspoon adding bit of oil.
  11. After it is smooth, divide the mixture into equal portions and make each a flat roundel. Make hole with finger in each roundel
  12. Wrap Thali Of Khichi in kitchen cloth or any clean cloth
  13. Steam these khichi in a steamer for 20 minutes.
  14. Remove it from heat and serve hot hot with oil and methi sambhar or garlic chutney.
