One of the healthiest breakfast to start your day with. South Indian style tomatoe upma made with oats is a lovely fusion of flavours and health benefits.

Ingredients Serving: 2

  1. Plain quaker oats - 1 1/2 cup
  2. Water - 3 cups
  3. Tomatoes - 3 medium size
  4. For tempering:
  5. Oil - 2 teaspoon
  6. Chana daal - 1 teaspoon
  7. Mustard - 1 teaspoon
  8. Cashew nuts- 2 tablespoon
  9. Green Chilli - 2 finely chopped
  10. Curry leaves - few
  11. Coriander - 2 tablespoon
  12. Spices :
  13. Turmeric - 1/4 teaspoon
  14. Garam masala powder / pav bhaji masala - 1/2 teaspoon
  15. Red chilli powder - 1/4 teaspoon
  16. Salt to taste

Instructions

  1. Add oil to a kadhai. As it heats up start with the tempering
  2. First add the mustard seeds, then Chana daal, cashews. Saute.
  3. Now add the green chillies and saute. Add the curry leaves. Then goes in the finely chopped tomatoes
  4. Add the spices and salt. Saute for 2 minutes. Cover and cook till mushy
  5. Now uncover add the water. Cover and let boil.
  6. Uncover and add the oats. Add chopped coriander. Simmer for 3 to 4 minutes till water dries up a little and oats is cooked.
  7. Serve hot.
