Ingredients Serving: 4

  1. Cooked rice 200 grams
  2. Eggs whisked 2
  3. A bowl full of chopped and boiled veggies like carrots, broccoli, French beans and green peas
  4. Garlic pearls finely chopped 8-10
  5. Big onion finely diced 1
  6. A handful of spring onion greens finely chopped
  7. Soya sauce 1 tablespoon
  8. Vinegar 1 tablespoon
  9. Salt to taste
  10. Olive oil 2 tablespoon
  11. A boiled egg to garnish

Instructions

  1. In a non stick pan, add olive oil and wait for a few seconds for it to heat up
  2. Next add the garlic and onions and sauté over medium heat till onions are translucent and the garlic turns slightly brown. The garlic should give out an aroma at this time
  3. Add the boiled veggies and sauté for another 2-3 minutes
  4. An easy way to blend the eggs into the dish is to make a divide in the center of the pan first and gently push the veggies to one side. Then add the whisked egg slowly onto the other side and cook on Low heat
  5. Next, stir the eggs to form a scrambled eggs like texture and then blend them well with the veggies
  6. Lastly add the cooked rice and mix well
  7. Add salt to taste, soya sauce and vinegar. Give all the ingredients a good mix and switch off the stove
  8. Serve hot garnished with a slit boiled egg and drizzled with spring onion greens(optional)
