ABOUT Kerala Egg Roast RECIPE

Its the best side dish with Appam, you can also eat it with Roti or rice. simple, easy and quick to make, the egg roast is rightly spiced and delicious

Ingredients Serving: 2

  1. 2 boiled eggs
  2. 2 large onions thinly sliced
  3. 1 tomato puree
  4. 2-3 green chillies slit
  5. 1tsp red chilli powder
  6. 1TSP CUMIN POWDER
  7. 1tsp corriander powder
  8. 1tsp garam masalA
  9. curry leaves
  10. Coconut oil 3-4 tbsp
  11. 1tsp ginger garlic paste
  12. Turmeric powder 1/2 tsp
  13. Salt and pepper to taste

Instructions

  1. Heat oil in a pan, add onion and just lightly mix it. Add salt and turmeric. Mix well and cook covered for 5-7mins
  2. Add ginger garlic paste, green chillies , curry leaves and saute until raw aroma goes away
  3. Add tomato purée and saute for 2 mins , add all masalas and now saute for few minutes
  4. Move all masalas to edge of the pan and place boiled eggs in centre...let it remain for 2-3 mins, Gently flip and ensure egg is getting roasted, this will take few mins..Now bring all masalas to centre and mix egg and masalas well. Cook for 2-3 mins more. Garnish with curry leaves and serve hot
