Simple and spicy egg roast, that can be served with some hot rice on the side.

Ingredients Serving: 2

  1. Eggs 2
  2. Shallots 10
  3. Tomato 1
  4. Green chillies 2
  5. Ginger garlic paste 1 tsp
  6. Turmeric powder 1/4 tsp
  7. Chilli powder 1 tsp
  8. Coriander powder 1 tsp
  9. Cumin powder 1/2 tsp
  10. Garam masala 1/2 tsp
  11. Curry leaves a bunch
  12. Coconut oil 2 tbsp
  13. Salt as required
  14. Cumin seeds 1/2 tsp


  1. Boil eggs and keep aside
  2. In a pan,heat coconut oil, when hot add cumin seeds, Curry leaves and let it splutter.
  3. add ginger garlic paste and saute well.
  4. Add chopped shallot onions and saute till brown.add slit green chillies and mix well.
  5. Add chopped tomatoes and cook till soft and mushy.
  6. Add spice powders and salt and cook without water for 10 minutes
  7. Add the boiled eggs to it and give a stir
  8. Kerala egg roast ready
