ABOUT Methi Na Muthia ( Fenugreek dumplings) RECIPE

Gujarati speciality is one of the collections.Muthia is a staple food of  Gujarat.  It falls under the category of snacks.  It is one of the healthy snacks, since the greens  ( vegetables like spinach, fenugreek, bottle gourd etc. ) are steamed and not  fried.   The easy to make process along with health benefits of these adds  its value and demand of preparing them frequently.

Ingredients Serving: 2

  1. 3 cups fenugreek(methi) leaves ,Finely chopped 
  2. 1 1/4 cup gram flour  (besan )
  3. 1 / 2 cup semolina  (rava/suji )
  4. 2 tbsp oil 
  5. 1 tsp baking soda 
  6. 1 1/ 2 tbsp green chilli - ginger paste
  7.  1 tsp red chilli powder 
  8. 1 tsp dry mango powder 
  9. 1/2 garlic paste ( optional)
  10. 1 1/2 tsp sugar 
  11. Salt to taste
  12. For tempering- oil
  13. mustard seeds 1 tsp
  14. sesame seeds 1 tsp

Instructions

  1. In a bowl, mix all the ingredients simultaneously along with the chopped methi. Mix well till you get a fine consistency.  Make cylindrical  shaped rolls  ( approx. 2 - 3 inches in length ) from the prepared dough.
  2. Now arrange the  rolls, on a greased sieve and steam in a steamer for 20 minutes on medium flame.  After removing from flame, cut the muthias vertically into 1/2 inch sections. 
  3. In a pan, heat the oil and add the mustard and sesame seeds.  When the seeds crackle, add the muthias and flip once or twice gently so that they do not loose the shape.  Serve with fresh coriander chutney and Indian tea.
