My son dislikes Eggplant so I try various ways to make him eat. These nuggets are yummy and can be munched on as snack any time

Ingredients Serving: 4

  1. 1 big baingan ( bharta variety)
  2. Oil for frying
  3. Half cup breadcrumbs
  4. Salt and pepper to taste
  5. 1tsp chilli powder
  6. Half cup Maida
  7. 1 egg(ground flax + water for veg version)


  1. Cut ends off the eggplant. Here we are using the baingan that we use for Bharta types
  2. Peel off skin, if you keep the skin nuggets will taste weird. Now cut into squares like nuggets after peeling
  3. Place Cut Baingan nuggets in a colander and mix with salt and chilli powder. Keep it aside near sink.It might drip water which is ok
  4. Take egg in a bowl and keep it aside. For veg version, make flax egg with ground flax and water. In another bowl, have breadcrumbs. In third bowl flour salt and pepper mixed well
  5. now take nuggets roll them in flour mix, then dip in egg and finally in breadcrumbs. I use fork while doing it else it gets messy
  6. Heat oil in a wok, add these nuggets fry on medium flame until golden brown. Place it on absorbent towel to absorb excess oil
  7. Serve hot with sauce
  8. For healthier version, bake them in oven for 15 minutes at 180
