Ingredients Serving: 4

  1. Besan 1.5 cups
  2. Salt to taste
  3. Sugar 1/2 tsp
  4. Citric acid 1/4 tsp
  5. Water to make batter
  6. Baking soda 3/4 tsp
  7. Oil 1 tsp
  8. Mustard seeds 2 tsp
  9. curry leaves
  10. Slit green chillies 4-5
  11. Coriander leaves finely chopped

Instructions

  1. Mix water to Besan, Salt, Sugar, Citric acid. Mix it well to a medium thick smooth batter like consistency.
  2. Mix baking soda to 4-5 spoons of water.
  3. Add soda and water mixture to besan mixture.
  4. Beat the batter for minimum 2 minutes in one direction so as to make it more aerated and light.
  5. Steam it in steamer for 10-15 minutes or you can also microwave the batter for 3 to 4 minutes till a tooth pick when pierced in centre comes out clean.
  6. For tempering heat oil add mustard seeds, curry leaves and green chillies. Cook till mustard seeds splutters.
  7. Add tempering to cooked Dhokla.
  8. Garnish with coriander leaves.
