Ingredients Serving: 4

  1. Paneer (Cottage Cheese, cubed) - 250 grams
  2. Thick curd/yogurt (nicely whisked) - 1 cup
  3. Fresh cream - 1 tbsp
  4. Fresh Coriander puree - 2 tbsp
  5. Ginger paste - 1 to 2 tsp
  6. Refined flour - 1 tsp
  7. Chopped coriander - a handful
  8. Green chilies (chopped) - 1 tsp
  9. Salt - as per taste
  10. Black pepper corns - 3 to 4
  11. Cloves - 2 to 3
  12. Bay leaf - 1
  13. Cumin seeds - 1 tsp
  14. Turmeric powder - 1/2 tsp
  15. Coriander powder - 1 tsp
  16. Black pepper powder - 1/2 tsp
  17. Garam masala powder - 1 tsp
  18. Sugar - 1 to 2 tsp
  19. Vegetable oil - 1 tbsp

Instructions

  1. Whisk together curd, coriander puree, ginger paste, refined flour, turmeric, coriander powder, black pepper powder and garam masala powder. Keep aside.
  2. Heat oil in a wok and add cumin seeds, black pepper corns, cloves and bay leaf. Once they change color, add chopped green chilies. Fry for 30 seconds, after which add the yogurt batter.
  3. Keep stirring the yogurt for 3 to 4 minutes. If the gravy seems too thick, add some water to adjust the consistency. Let it boil for 5 to 7 minutes and then add the paneer cubes. Let it cook for another 10 minutes covered with lid.
  4. Add sugar and salt; and give a good mix. Switch off the flame after a minute and add in the cream. Mix well.
  5. Just before serving, garnish with a handful or chopped coriander and ginger julienne.
