Ingredients Serving: 4

  1. 2 cups chopped Spinach
  2. Half cup Juliened Capscicum
  3. 5-6 baby corn
  4. 2 onion finely chopped
  5. 1 tomato finely chopped
  6. 1-2 green chillies slit (adjust)
  7. 1bsp ginger garlic paste
  8. 1tsp red chilli powder
  9. 1/4 tsp Turmeric
  10. Half tsp corriander powder
  11. 1/4 tsp pepper
  12. 1tsp garam masalA
  13. 2tsp pav bhaji or kitchen king masala
  14. 1TSP CUMIN POWDER
  15. Salt to taste
  16. 5-6 tbsp oil
  17. 1/4 tsp lemon juice
  18. Coriander leaves for garnish
  19. 2-3 cloves
  20. 2 cardamom pod
  21. 1 bay leaf

Instructions

  1. Heat 1-2 tbsp oil in a pan. Fry baby corn and capsicum for 2 mins . Add spinach and continue for another 2 mins. Keep it aside
  2. In the same pan add remaining oil. Add cloves, cardamom and bay leaf and lightly saute. Add onion, Ginger garlic paste, cumin powder, green chillies and saute until onion is translucent and raw aroma goes away
  3. Add all the masalas and continue sauteing another 6-7 mins, add tomato and saute until tomato is tender
  4. Add the fried baby corn spinach capscicum. Mix it well. Add salt to taste
  5. Add 1 cup water,bring it to boil, cook it covered on low flame for 5-7 mins. Add lemon juice. mix well. Switch off. Garnish with coriander leaves and serve it hot with rice or roti
