Ingredients Serving: 4

  1. Fenugreek (methi) leaves 1 cup tightly packed and finely chopped
  2. Green chillies 2 or 3 finely chopped
  3. Coriander leaves 1/4 cup finely chopped
  4. Garlic cloves 7 or 8 finely chopped
  5. Spring onions 1/4 cup finely chopped
  6. Wheat flour 2 cups
  7. Turmeric powder 1/4 teaspoon
  8. Carom seeds (ajwain) 1/4 teaspoon
  9. Nigella seeds (kalonji) 1/4 teaspoon
  10. Asafoetida (hing) a pinch
  11. Salt to taste
  12. Oil for shortening 2 teaspoons and more oil for shallow frying the parathas

Instructions

  1. Crush coriander leaves, green chillies and garlic and make it into a coarse paste.
  2. Take wheat flour in a wide vessel, add chopped methis leaves, the above coarse paste and chopped spring onions.
  3. Also add the remaining ingredients - turmeric powder, asafoetida, salt, carom seeds, nigella seeds, curd and 2 teaspoons oil
  4. Add more water and knead to a firm dough
  5. Keep covered for 10 minutes
  6. Divide the dough into 7 to 8 balls of even size
  7. To make parathas, roll each ball half way, smear with oil or ghee. Fold and roll out completely.
  8. The above step makes the parathas flaky .
  9. Now shallow fry on a hot tawa with oil or ghee and on medium flame
  10. Repeat procedure till all parathas are done.
  11. You can spread more ghee or butter while serving
  12. Serve hot with curd, dal, lassi or even a cup of tea
