Ingredients Serving: 4

  1. 500gms fresh mustard leaves
  2. 100 gms spinach
  3. 100 gms bathua
  4. 1 big tomato chopped
  5. 2-3 garlic cloves
  6. 1inch ginger chopped
  7. 1-2 green chilies roughly chopped
  8. Salt as per taste
  9. 1/2cup water
  10. 2tbsp maize flour
  11. 2tbsp butter/ghee or oil
  12. 1 onion finely chopped
  13. 1tsp garlic finely chopped
  14. 1tsp ginger finely chopped
  15. 1-2 green chilies slit


  1. Clean all the green leafy veggies and roughly chop
  2. In a pressure cooker, add leafy veggies,tomato ,garlic cloves , ginger,chopped green chilies
  3. Add 1/2cup water and salt
  4. Cook for 2 whistles on low flame
  5. Allow the veggies to cool
  6. Add the veggies to Grinder with maize flour
  7. Blend and make puree
  8. Heat 2tbsp butter in a pan
  9. Add finely chopped garlic ,ginger ,chili and onion
  10. Saute till golden brown
  11. Add puree to the onion mix
  12. Cook for 5-10 minutes on low flame
  13. Stir occasionally until gravy thickens
  14. Transfer to Serving dish with dollop of 1 tbsp butter on top. Serve with maize flour roti
