Ingredients Serving: 4

  1. 250 gm baby potatoes
  2. 2 tsp oil
  3. 1/4 tsp cinnamon
  4. 1 Clove
  5. 1 cardamom
  6. 6 - 7 garlic cloves
  7. 1/2 inch grated ginger
  8. 2 onion (sliced)
  9. 3 Green chili
  10. 1/4 cup Mint leaves
  11. 1/2 cup coriander leaves
  12. 1/2 cup spinach
  13. 1 tsp cumin seeds
  14. 1/8 tsp turmeric powder
  15. 1 tbsp Butter
  16. 1 tsp Salt
  17. 1/2 tsp Garam Masala
  18. 1 tbsp lemon juice

Instructions

  1. Pressure cook potatoes until done, peel off the skin.
  2. Heat 2 tsp oil, add cinnamon, clove, cardamom, garlic flakes, ginger. Mix and saute until aromatic
  3. Add sliced onions fry till golden on medium heat . Cool down mixture
  4. Grind green chilies, mint leaves, coriander leaves, spinach leaves to smooth puree
  5. Add cooked onion, grind with little water to form smooth paste
  6. Heat a 1 tsp of oil, roast the potatoes until golden. Keep it aside
  7. Heat oil, add cumin seeds and the paste. Mix well and cook on medium heat
  8. Add turmeric powder and butter. Cook for 3-4 minutes
  9. Add salt and 1/2 cup water. Mix and simmer for 5 minutes.
  10. Add garam masala. Mix well. Switch off. Add lime juice and mix
  11. Serve hot with roti or rice
