ABOUT Spicy Green Chaat RECIPE

Spicy and tangy green chaat.A healthy mix of green veggies spinach ,mint , coriander leaves , curry leaves with a mint flavoured crunchy sev toping . Tamarind syrup poured on top to give a tangy taste to your plate and refresing yougurt dressing leaves you wanting for more .

Ingredients Serving: 4

  1. Spinach chopped - 2 cups
  2. Soaked Chick pea - 1 1/2 cups
  3. Potato big- 1 , cubed
  4. Onion - 1 , chopped
  5. Green Chili - 5
  6. Besan - 1 1/2 cup
  7. Mint leaves - 1/2 Cup
  8. Curry leaves - 1/2 cup
  9. Asafoetida - 2 pinch
  10. Oil - 1 tablespoon
  11. Ginger chopped- 1 tablespoon
  12. Garlic chopped- 1 tablespoon
  13. Coriander leaves- 1/2 cup
  14. Cumin seeds- 1 tablespoon
  15. Cumin powder- 1/2 teaspoon
  16. Chat masala- 1/2 teaspoon
  17. Tamarind paste- 1 tablespoon
  18. Yogurt - 1 cup
  19. Tomato sauce- 4 tablespoon
  20. Sugar - 1 tablespoon
  21. Water as required
  22. Salt as per taste
  23. Oil for frying

Instructions

  1. Grind mint leaves, curry leaves and two chilies well with little water to smooth paste
  2. Sieve and drain water and keep aside.
  3. Mix besan, Asafoetida and salt in a bowl
  4. Add oil and green water and Mix it well until it has crumbly texture
  5. Knead into stiff dough by adding water as required
  6. Grease sev maker machine with disk which has tiny small holes
  7. Heat oil in a pan over medium flame. Now fill the container with prepared dough and close it tightly.
  8. Hold the machine over the pan and slowly release the sev in circular manner in hot oil
  9. Fry sev until golden brown and crispy
  10. Drain excess oil . Break into smaller pieces and keep it aside
  11. Pressure cook chick pea( soaked for 2-3 hours in water) and potatoes for 15 minutes with two cups of water and teaspoon salt until tender
  12. Heat oil in a pan, splutter cumin seeds . Add ginger garlic, chopped green chilies. Saute them for 30 seconds
  13. Add chopped onion and saute until it becomes translucent
  14. Add chopped spinach,coriander leaves and salt to taste. Cook until spinach become soft.
  15. Allow to cool completely
  16. Grind above mixture to form smooth puree
  17. Once steam is released, drain water from chickpea mix
  18. Heat oil in pan, add potatoes and mash it
  19. Add the green paste and pressure cooked chickpeas into it and mix well
  20. Add cumin powder , chat masala and salt. Mix and cook for a minute.
  21. Add about 1/2 cup of water in the grinder, swirl it and add water to gravy, mix. Bring to boil
  22. Simmer and cook till desired consistency is achieved
  23. To half glass of water , add tamarind paste and sugar mix well
  24. In a serving plate, add gravy then pour two tablespoon of tamarind water, one tablespoon tomato sauce then two tablespoon of yogurt and garnish it with sev. Spicy green chat is ready to serve
