Ingredients Serving: 2

  1. 2 cups mixed veggies, chopped
  2. Sambar powder 1 teaspoon
  3. Salt as per taste
  4. Tur dal -1/3 cup
  5. Oil - 1 tsp
  6. Urad dal - 1 1/2 tsp
  7. Whole Black pepper - 1/2 tsp
  8. Cumin seeds/jeera - 1/2 tsp
  9. Red chili - 3-4
  10. Grated coconut - 1/4 cup
  11. Oil - 2 tsp
  12. Mustard seeds - 1 tsp
  13. Hing - a pinch
  14. Curry leaves - a sprig

Instructions

  1. Heat a tsp of oil, saute urad dal, pepper, jeera and red chili until dals turn golden brown. Add grated coconut and mix. Switch off. Allow to cool completely. Grind to a smooth paste. Keep it aside.
  2. Pressure cook veggies and keep it aside. Heat oil in a pan, Splutter mustard seeds. Add hing, curry leaves, cooked vegetables, cooked dal and mix well
  3. Add 1/2 cup of water, salt and ground paste. Boil and then simmer for 3-4 minutes.
  4. Serve hot with rice
