Ingredients Serving: 3

  1. Gram flour - 1 cup
  2. Semolina - 1 cup
  3. Spinach puree - 1/3 cup
  4. Citric acid - 1/2 teaspoon
  5. Sugar - 1 tablespoon
  6. Ginger and chili paste - 1 tablespoon
  7. Salt to taste
  8. Fruit salt - 11/2 teaspoons
  9. Oil - 1 tablespoon
  10. Few strands Saffron soaked in curd - 1 tablespoon
  11. Mustard seeds - 1 teaspoon
  12. 1 pinch of asafoetida
  13. Vinegar - 1/2 cup
  14. Chili flakes - 1 teaspoon
  15. 7-8 Curry leaves for garnish

Instructions

  1. Mix gram flour , semolina , citric acid , sugar , ginger , chili paste and salt in a bowl
  2. Divide the mixture into two bowls. Add spinach puree , 4 tablespoons of butter milk and 1 teaspoon of eno to 1 bowl and make a smooth batter .
  3. Add saffron soaked curd , remaining butter milk and eno to second bowl and make a smooth batter .
  4. Add fruit salt to batters and mix gently
  5. Pour the yellow batter into a greased microwave safe dish and microwave for 2 minutes .
  6. Add the green batter on top of the yellow batter and microwave for another 2 minutes .
  7. Heat oil in a microwave safe small bowl and add mustard seeds , chili flakes , vinegar and asafoetida. Microwave for 1 minute .
  8. Pour tempering over the cooked Dhoklas and garnished it with curry leaves. Slice and serve
