ABOUT Cheesy Creamy Karela Kofta Curry RECIPE

Today i have made my dish by using very easily available yet bitter vegetable which is usually not liked by many people, especially by kids.It is Bitter Gourd (Karela).Yes u heard it right.I have made kofte with karela & potatoes by stuffing it with chutney mixed cheese and served in creamy gravy. So made it without any tension because nobody is going to guess about main ingredient .Do cook it and surprise your dear ones.

Ingredients Serving: 4

  1. Kofta ingredients :
  2. karela 200 grams
  3. sugar 1 tablespoon
  4. Boiled and mashed potato 1 cup
  5. Coriander leaves 1 tablespoon
  6. Salt as per taste, Red Chili powder 1 tbsp - adjust
  7. Garam masala 1 teaspoon
  8. Oil for frying
  9. Stuffing Ingredients :
  10. Grated mozzarella cheese 1/2 cup
  11. Coriander chutney 2 tablespoon
  12. Coriander Chutney ingredients :
  13. Chopped coriander leaves 1 cup
  14. Salt and green chili as per taste
  15. Roasted peanuts 1 tablespoon
  16. Roasted Jeera powder 1 teaspoon
  17. Lemon juice 1 teaspoon
  18. Minced garlic 1 teaspoon
  19. Gravy ingredients :
  20. Finely chopped onions 1/2 cup
  21. Tomato puree 1/2 cup
  22. Ginger garlic paste 1/2 Tablespoon
  23. Cream 1/2 cup
  24. Salt and chili as per taste
  25. Turmeric powder 1/2 teaspoon
  26. Garam masala 1 teaspoon
  27. roasted cumin powder 1/2 teaspoon
  28. Cardamom powder 1/2 teaspoon
  29. Milk 1 cup
  30. Water 1/2 cup
  31. 4 tbsp Coriander leaves to garnish
  32. butter 2 tablespoon

Instructions

  1. Remove seeds and wash all karelas. Now rub salt liberally on karelas and add sugar . keep it aside for 1 hour. This will reduce bitterness of Karela
  2. Grind all mentioned ingredients of chutney to thick smooth paste without adding water.
  3. Mix chutney with mozzarella cheese and keep it aside
  4. After 1 hour , wash karelas twice and grate very finely.
  5. Now mix all mentioned ingredients for kofta. Mash mixture until lump-free
  6. Heat oil for frying over medium heat
  7. Make small round balls of kofta mixture .Add 1 teaspoon cheese mixture in the center of ball and bring its ends together and seal edges
  8. Deep fry all koftas till golden brown over low flame . Keep koftas aside
  9. Heat butter in a wok. Saute onions till transparent .Now add ginger-garlic paste. Saute for another 2 minutes.
  10. Add tomato puree and saute till oil separates from the sides of pan
  11. Add all spices and mix well.Add 1/2 cup water and bring to boil
  12. Add milk and cream. Mix and simmer for 2 minutes. Switch off the stove
  13. While serving , Add in gravy to serving dish and then add koftas.
  14. Garnish with cream ,coriander leaves. Serve warm with rice or naan.
