Macher matha diye Pui shaker chanchra | Malabar Spinach with Fish head , A traditional Bengali preparation with fish head.. Bengali s are die heart fan of fish so they never throw fish head as waste material..fish head is one of the most important part to make delicious dishes ..Macher matha diye pui shaak is one of that dish..whenever we made any mix veg preparations with fish head In typical bengali term we call it chanchra and Malabar spinach with fish head is one of that delicious preparations..

Ingredients Serving: 6

  1. Malabar spinach - 500 gms
  2. Katla / Ruhu / Hilsa fish head - 1 ,cut into 4 pieces
  3. Potatoes- 2 ,cubed
  4. Red pumpkin - 200 gms , cubed
  5. Brinjal - 1 small , cut into chunks
  6. Onion - 1 ,sliced
  7. Ginger + green chili paste- 1 tbsp
  8. Turmeric - 1 tsp
  9. Chili powder- 1/2 tsp
  10. Cumin powder- 1 tsp
  11. Coriander powder- 1 tsp
  12. Salt as per taste
  13. Sugar - 1/2 tsp
  14. Garam masala - 1 tsp
  15. Bay leaves - 2
  16. Dry red chili - 1
  17. Cumin seeds - 1/2 tsp

Instructions

  1. Wash and chop spinach leaves. Keep it aside. Marinate fish with turmeric and salt
  2. Shallow/Deep fry fish heads on both sides till light brown and done. Keep it aside
  3. In the same pan, add cumin seeds , bay leaves and dry red chili . Saute for 1 minute
  4. Add sliced onions and fry till light brown
  5. Now add ginger green chili paste stir it for a minute.Add all veggies and mix well .Sprinkle little salt and cook for 4-5 minutes
  6. Now add all dry spices except garam masala. Mix well and saute for 2 -3 minutes
  7. Now add chopped malabar spinach and mix well
  8. Cover and cook for 4-5 minutes.
  9. Now open pan and add fried fish head , sugar and salt,gently stir and mix well
  10. Add garam masala and saute for 5-6 mins or till curry dries up completely.
  11. Serve Macher matha diye Pui shaker chanchra /Malabar spinach with fish head hot with rice
