This dutch pastry is one of the best known tea time snacks from Holland. A yeasted pastry that is deep fried and filled with currants and raisins

Ingredients Serving: 6

  1. 400 g flour
  2. 2 tsp salt
  3. 20 g fresh yeast
  4. 300 ml milk
  5. 1 tbsp sugar
  6. 2 eggs
  7. 200 gms raisins soaked, washed and dried
  8. 1 apple peeled and diced
  9. 100 grams of black currants
  10. oil for Deep frying
  11. Icing sugar for dusting


  1. Dissolve the yeast in the milk, leave for a few minutes to get frothy
  2. Mix the flour, salt and sugar. Add the eggs and the yeast-milk mixture to the flour. Use a wooden spoon, whisk (needs to be a sturdy one) or dough-hooks and a mixer to mix everything together.
  3. Keep mixing for about 10 minutes to develop the gluten. Mix the raisins and apple through. over the bowl and leave to rise for about 1 hour.
  4. Heat oil. Drop the batter with 2 spoons, or an ice cream scoop. Cook on each side for about 4 minutes. Drain and dust with icing sugar.
