Hariyali Barfi

Ingredients to make Hariyali Barfi

  • 500 grams fresh green peas
  • 1 litre milk
  • 100 grams ghee
  • 100 gram sugar
  • 1 cup chopped dry fruits
  • 1 tsp cardamom powder
  • Green food color - as required - optional

How to make Hariyali Barfi

  1. Grind peas to fine paste
  2. Heat ghee in a pan. Add green paste and saute over medium heat until golden brown
  3. Add milk and mix well. Add food color and stir well
  4. Stir continuously until mixture starts thickening. Add sugar and mix well
  5. Cook until oil separates. Switch off. Add cardamom powder and chopped nuts reserving little for garnish . Mix well
  6. Grease a plate. Add the mixture over greased plate and spread evenly
  7. Sprinkle reserved chopped dry fruits on top. Allow barfi to set
  8. Slice the barfi and serve
