malabar spinach is very popular in west bengal.This can be cooked in vegetaran and non vegetarian way.Today i cook it with fish head.It is a must cooked dish in thd lunch of any ceremony in Bengal.

Ingredients Serving: 5

  1. malabar spinach 500gms
  2. fish head 1
  3. potatoes diced 1/2 cup
  4. pumpkins 1/2 cup
  5. Brinjal 1/2 cup
  6. slited green chillies 3
  7. Onions chopped 1 cup
  8. ginger paste 2 tblspn
  9. green chilly paste 1 tspn
  10. Turmeric
  11. for tempering -
  12. Cardamom 2
  13. Cloves 3
  14. Cinnamon Stick 1
  15. Bay leaves
  16. paanch phoron 1/2 tspn
  17. garlic 7/8 crushed
  18. dried red chilles roughly torned
  19. others-
  20. Cumin powder 1/2 tspn
  21. coriander powder 1/2 tson
  22. Red chilly powder 1 tspn
  23. Mustard oil
  24. Salt
  25. sugar
  26. Lime 1


  1. cut the leaves from the stems,wash thoroughly both
  2. cut the stems in 2" size if they r young
  3. wash the fish head, cut into pieces, clean it well. add turmeric and salt
  4. heat copious amount of mustard oil
  5. add fish head pieces,fry it thoroughly very well otherwise bad odour will be there in there
  6. keep aside
  7. add the brinjals, fry them and keep aside
  8. now throw the tempering ingredients, allow to splatter till aroma comes out
  9. add onions and vegetables, fry them till brown, in this stagd add salt and sugar to this
  10. now add the stem first, stir fry them,
  11. now add ginger,green chilly paste, cookedd with vegetables
  12. add the leaves,mixand cover with lid
  13. don't add any water,it will cook by it's own juice
  14. after some time open lid add the powder spices, mix again cover it
  15. after 2/3 min open lid,add the fried fish head,give a steady stir among all ingredients in high flame
  16. cover it to cook, simmer the flames
  17. then open lid add frued brinjals,slited green chilliesmix it with all,
  18. cover and cook for 2/3 min,when the water would absorb all,turn off the flame
  19. add the limd juice over the top
  20. cover with a lid for 2/3 min
  21. serve hot with hot rice
