Heat oil over medium flame in a non stick pan/wok
Add fennel seeds, ginger garlic paste and black pepper powder and sauté for 2 minutes.
Throw in the onions, curry leaves, green chillies, salt. Mix well. Cover and cook till onions turns translucent.
Add the tomatoes and dry spices and cook covered till tomatoes soften
Add the boiled eggs and cook covered till the gravy has dry roasted(check in between so as to avoid burning/overcooking)Add someboiled water if needed
Check the seasoning and adjust accordingly and bring the curry off the heat
Serve hot with rice/chapatis/Nans/Kulchas, etc
