Healthy and delicious pulav made using baby spinach and mildly flavoured with whole spices.

Ingredients Serving: 4

  1. Rice - 2 cups
  2. Baby spinach - 400 gms
  3. Tomatoe - 1
  4. Onions - 3
  5. Ginger - 2 tbsp chopped
  6. Garlic - 3 tbsp chopped
  7. Whole spices :
  8. Cardamon - 3
  9. Cloves-3
  10. Whole Black pepper - 8
  11. Cinnamon - 2 sticks
  12. Green chillies - 2 broken
  13. Red chillies - 2
  14. Salt to taste
  15. Red chilli powder - 1 tbsp
  16. Turmeric - 1/2 tsp
  17. Oil - 1 tbsp
  18. Ghee - 1 tbsp
  19. Water - 5 cups

Instructions

  1. Wash and soak rice. Keep aside
  2. Wash baby spinach thoroughly. Keep aside
  3. Add ghee and oil to a deep sauce pan
  4. Add whole spices
  5. Add ginger and garlic, saute for a minute
  6. Add the sliced onions and brown till cooked
  7. Add the spinach chopped roughly
  8. Cook till wilted
  9. Add chopped tomatoes and spice powders
  10. Cook till mushy
  11. Now add the washed rice and mix
  12. Add water and salt for seasoning
  13. Bring to a rolling boil
  14. Add juice of half lemon
  15. Cover and Simmer for 20 minute or till cooked
  16. Open, fluff and mix the rice with light hand.
  17. Serve hot
